Can someone point me to a simple guide for changing the UI? I've downloaded one but want to be sure I don't screw things up...

Drop the folder containing the new UI into the uifiles folder (located inside the Game folder). Do not put it inside the Default folder which is also located inside the uifiles folder. Give your new UI folder a name with no spaces. Then launch the game and you can load your new UI from the Options window.
