My set up includes:

27" iMac mid-2010
Intel Quad Core i5 2.8ghz
1gb Radeon 5750
8gb of Memory (4 factory / 4 self installed)
Snow Leopard
Virtue Desktops (for easy space switching, instant no lag response time)

I was able to effectively 6-box with this setup with virtually no lag using the newest HTC (Hobart Test Client). To give you a comparison, I was only ever able to 3-box with this same exact set up using the OAC (Old Ass Client). The optimization to the client and utilization of the x86 processor architecture Hobart was able to make using his awesome client are leaps and bounds over what I expected.

I am convinced any i# processor will be able to (at minimum) run 4+ clients at once without stutter. Dual Core machines should be able to handle (at minimum) 2-4 clients at once as well depending on the amount of memory you have installed on the system (remember, EQ didn't really use hardware acceleration for video lag). If you have more questions regarding this set up or any questions in general, I'd be happy to answer them to the best of my ability.

I can confirm this.

My OAMP (Old Ass Macbook Pro) that is only a 2.0 ghz dual core and 3 gbs can run 4 HTCs 4 with about 25-35 FPS. When I try running 5, it crawls down to 5-10 FPS.

It's strange because you would think that each instance would decrease FPS in a somewhat linear fashion (as it tended to do with the old client) but 1-4 on the new client all run at 25-35. 5 just creates an instant bottleneck in performance for some strange reason.

You have to make sure the application starts up in compatibility mode for Rosetta.

Yea, I love Virtue Desktops, works so much faster and cleaner than regular spaces!
